General Tso’s Meatballs

Ingredients

Meatballs:

1lb Ground Pork Niman Ranch

1 egg

1 tsp salt

1/2 tsp black pepper

1 tsp fresh ground ginger

2 tsp minced garlic

3/4 cup panko (optional: Gluten-free)

1/8 cup of milk

1 tbsp tomato paste

1 tsp chili paste

3 tbsp scallions, chopped fine

Sauce:

1 cup chicken stock

1 tbsp cornstarch

2 tbsp tomato paste

1/4 cup pineapple juice

1/4 tsp kosher salt

pinch of ground red pepper

1 tbsp rice vinegar

1 tbsp sesame oil

1 1/2 tsp minced garlic

1/4 cup brown sugar (packed)

5 tbsp soy sauce (Optional: Gluten-free) 

 

Cooking Instructions

Meatballs:

  1. Mix all of the ingredients together in a bowl (don't over mix, you want texture).
  2. Roll into 1 1/2" to 2" meatballs.
  3. Add a 1/8 cup of vegetable oil to a skillet and place over medium heat.
  4. Cook the meatballs on each side until golden brown (international temp should read 165).
  5. Remove and place on a paper towel-lined plate.

Sauce: 

  1. Add the cornstarch to the chicken stock, mix well.
  2. Place a stockpot over med/low heat. Add the chicken stock slurry, allow it to thicken some.
  3. Add the rest of the ingredients, stir until it thickens. Add in the meatballs to coat well.

*Optional Toppings: sesame seeds, scallions, and if you like really spicy add some Thai peppers to the sauce.
