Triple Threat Niman Meatballs

1 pound Niman Ranch Ground Beef
½ pound Niman Ranch Ground Pork
½ pound Niman Ranch Ground Lamb
2 oz garlic, minced
2 oz shallot, minced
2 eggs
1 cup freshly grated Romano cheese
2 Tsp Spiceology Apple Cinnamon Blend
2 Tsp Spiceology Candied Bacon Sriracha Blend
2 Tsp Fresh chopped flat parsley
salt and ground black pepper to taste
2 cups white bread - crust removed small cubes
1/4 cups buttermilk
3/4 cup 1/2 and 1/2 or whole milk
4 oz olive oil
Cooking Instructions
- Combine Niman Ranch Ground Beef, Ground Pork and Ground Lamb in a large bowl. Add garlic, shallots, eggs, cheese, Spiceology Apple Cinnamon Blend, Spiceology Candied Bacon Sriracha Blend, parsley, salt and pepper and mix well.
- Blend bread crumbs into meat mixture. Slowly add the buttermilk/whole milk mixture 1/4 cup at a time.
- Shape into meatballs.
- Heat olive oil in a large skillet. Sauté meatballs in batches - browning and creating a slightly crisp texture cooking to an internal temperature of 165 degrees.
- Remove from heat and place on a mesh rack to allow grease to drip from meatball.
