How beef is raised matters.
Exploring regenerative organic management and nutrient density in Niman Ranch Regenerative Organic Certified® beef.
New nutrient-density testing offers an early look at how Niman Ranch Regenerative Organic Certified beef compares with USDA FoodData Central reference values—and how genetics, pasture, soil health, grazing management and animal care may help shape the beef itself.
A different way of looking at beef quality.
For decades, Niman Ranch has focused on exceptional eating quality, humane animal care, independent family farmers and respect for the land. The Regenerative Organic Certified® (ROCTM) beef program extends that philosophy across genetics, soil health, forage quality, adaptive grazing, animal welfare, finishing practices and long-term rancher stewardship.

The samples showed measurable differences.
Testing of Niman Ranch ROCTM ground beef and ribeye found differences in fatty acids, vitamins and minerals when compared with selected USDA FoodData Central reference values.
ROCTM Ground Beef
ROCTM Ribeye
Nutrient density begins long before the beef reaches the plate.
Niman Ranch’s ROCTM beef program looks at the whole system: genetics, soil health, forage production, grazing management, animal care, finishing practices, rancher support and long-term stewardship.
The findings are best understood as the result of an interconnected ranching system. Each part below influences the others and helps shape the overall program.
Meat Quality
Flavor, tenderness, marbling and nutrient density are the end result of the broader system.
Genetics
Domestic Angus genetics are selected for marbling, performance and the ability to thrive in this production system.
Pasture
Diverse, perennial forage gives the animals a grass-based diet and supports the broader regenerative system.
Soil Health
Healthy soil helps support diverse, productive forage and contributes to a more resilient ranch ecosystem.
Adaptive Grazing
Grazing is managed to support plant recovery, efficient pasture use and long-term land resilience.
Forage Quality
Nutrient-dense feed can influence the nutrient profile of beef, connecting the landscape to the animal.
Animal Welfare
Low-stress, high-care environments support better health, performance and consistency throughout the program.
Rancher Stewardship
Generational knowledge and long-term commitment help build a stronger, more resilient system over time.
How regenerative organic management shows up in practice.
These are the operating principles behind the program—from the way cattle are fed and moved, to the role of cover crops, soil health and long-term stewardship.
|
ANIMAL DIET 100% grass-fed, grass-finished, pasture-raised Cattle are raised and finished on pasture with a 100% grass diet. |
PASTURE MANAGEMENT Adaptive grazing + pasture recovery Cattle move through pastures to support plant recovery, soil health and more diverse forage. |
PLANT DIVERSITY Cover crops + living roots Diverse plant communities help build soil health and create a more resilient ranching system. |
|
PRODUCTION STANDARDS No synthetic fertilizers, herbicides, pesticides, antibiotics or added hormones The program follows strict regenerative organic and organic standards across the production system. |
LONG-TERM STEWARDSHIP Independent ranchers + lasting partnerships The program currently includes 105,000 acres under management, with a goal of 250,000 acres by 2028. |

How to read the findings.
The report presents an initial, directional look at nutrient characteristics observed in the tested samples. The methodology and limitations matter when interpreting the comparisons.
Study design and sampling
- Three ribeye samples and three ground beef samples were analyzed.
- Results from the three samples for each product were averaged to create a mean nutrient profile.
- Testing covered 106 analytes.
Laboratory analysis
Data and comparisons
Limitations and next steps
- The study is not definitive or statistically comprehensive.
- The Niman Ranch ground beef was formulated to an exact 80/20 lean-to-fat ratio, while the USDA-derived ground beef reference dataset spans multiple lean-to-fat ratios.
- Additional sampling over time will continue to strengthen understanding.
