Garlic, Herb, and Lemon Pork Chops

4 Niman Ranch Pork Loin Chops
1 tsp kosher salt
½ tsp pepper
2 tbsp olive oil
½ tbsp fresh rosemary, minced
½ tbsp fresh thyme, minced
4 garlic cloves, minced
½ cup chicken broth
1 tbsp butter
1 tbsp fresh lemon juice
Cooking Instructions
1. Let all pork chops come to room temperature. Season each side with salt and pepper.
2. Bring a large cast iron skillet to high heat and add olive oil.
3. Once the skillet and olive oil are hot, place pork chops in skillet and sear for 1-2 minutes on each side, until brown and slightly crispy on the edges.
4. Once browned on each side, remove pork chops from the skillet and set aside.
5. Bring the skillet temperature down to low and deglaze with chicken broth. Mix in lemon juice, butter, garlic, and herbs and add pork chops back into the skillet.
6. Baste the pork chops with the garlic herb butter mixture and cover to cook the remainder of time on low (about 3-4 minutes). Check each pork chop with a meat thermometer to make sure their internal temperature is at 145-150F.
7. Remove from heat and plate by pouring desired amount of garlic herb butter mixture onto each pork chop. Serve with desired side and enjoy!
