Ground Pork Burrito Bowl

Ingredients

1 pound Niman Ranch Ground Pork 

  • 1 pack of your favorite taco seasoning 

1 can black beans, drained and rinsed 

  • 1/4 tbsp cilantro, roughly chopped 
  • Salt to taste 

2 cups frozen fire roasted corn 

  • Salt to taste 

For the Cilantro Lime Rice: 

  • 1 cup basmati rice 
  • 1/4 cup cilantro, roughly chopped 
  • 1/2 tbsp lime juice 

For the Veggie Fajitas: 

  • 1/2 red onion, sliced 
  • 1/2 green bell pepper, sliced 
  • 1/2 yellow bell pepper, sliced 
  • 1 tbsp dried oregano seasoning 
  • Salt to taste 

Toppings: 

Guacamole 

Pico de gallo

Cooking Instructions

  1. Prepare basmati rice in a rice cooker or stove top. Once fully cooked, fluff and stir in lime juice and cilantro. Add salt to taste. Cover and keep warm.
  2. While rice is cooking, cook ground pork in a large skillet over medium-high heat until browned and cooked through. Stir in taco seasoning and cover to keep warm.
  3. Warm 1 tbsp olive oil in a large skillet over medium heat. Add sliced onion and bell peppers and sauté until soft. Stir in oregano seasoning and salt to taste.
  4. Warm black beans in a small saucepan, and stir in cilantro and salt to taste. Cook fire roasted corn according to instructions on packaging.
  5. To build your burrito bowl, add 1/4 - 1/2 cup rice to a bowl. Top with ground pork, veggie fajitas, black beans, corn, guacamole, and pico de gallo. Garnish with cilantro and a slice of lime and enjoy!
