Ground Pork Burrito Bowl

1 pound Niman Ranch Ground Pork
- 1 pack of your favorite taco seasoning
1 can black beans, drained and rinsed
- 1/4 tbsp cilantro, roughly chopped
- Salt to taste
2 cups frozen fire roasted corn
- Salt to taste
For the Cilantro Lime Rice:
- 1 cup basmati rice
- 1/4 cup cilantro, roughly chopped
- 1/2 tbsp lime juice
For the Veggie Fajitas:
- 1/2 red onion, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1 tbsp dried oregano seasoning
- Salt to taste
Toppings:
Guacamole
Pico de gallo
Cooking Instructions
- Prepare basmati rice in a rice cooker or stove top. Once fully cooked, fluff and stir in lime juice and cilantro. Add salt to taste. Cover and keep warm.
- While rice is cooking, cook ground pork in a large skillet over medium-high heat until browned and cooked through. Stir in taco seasoning and cover to keep warm.
- Warm 1 tbsp olive oil in a large skillet over medium heat. Add sliced onion and bell peppers and sauté until soft. Stir in oregano seasoning and salt to taste.
- Warm black beans in a small saucepan, and stir in cilantro and salt to taste. Cook fire roasted corn according to instructions on packaging.
- To build your burrito bowl, add 1/4 - 1/2 cup rice to a bowl. Top with ground pork, veggie fajitas, black beans, corn, guacamole, and pico de gallo. Garnish with cilantro and a slice of lime and enjoy!
