Spicy Chili Crisp Pork Noodles

This dish isn’t for the spice-averse. It is for the human who loves a tingling heat and lots of flavor. These dan dan-inspired noodles use jarred chili crisp—a Chinese condiment made with Sichuan peppercorns and fried garlic and onion—as well as a few pantry staples. You can find chili crisp, sometimes referred to as chili crunch, at grocery stores and online. 

Ingredients

¼  cup soy sauce 

3 Tbsp. rice vinegar 

2 Tbsp. granulated sugar 

1 Tbsp. cornstarch 

1 tsp. five spice powder 

1 lb. Niman Ranch ground pork 

⅓  cup jarred chili crisp 

1 (1 inch) piece ginger, peeled and grated 

2 Tbsp. unsweetened peanut butter 

2 Tbsp. vegetable oil 

10 oz. Chinese dried thin wheat noodles 

1 lb. baby bok choy, quartered lengthwise 

chopped peanuts and sliced scallions, for garnish 

Cooking Instructions

  1. Bring a large pot of water to a boil. In a medium bowl, whisk 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sugar, cornstarch, and ½ tsp five spice powder until sugar and cornstarch are dissolved. Mix in ground pork until just combined. Set aside.
  2. In a large bowl, whisk chili crisp, ginger, peanut butter, and remaining 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon sugar, and ½ tsp five spice powder until combined.
  3. Heat vegetable oil in a large skillet over medium-high heat. When oil is shimmering, add pork, breaking it into small pieces with a wooden spoon. Cook, stirring occasionally, until pork is cooked and crispy, about 5 minutes. Turn off heat.
  4. Add noodles to the boiling water. Cook according to package directions (usually about 2 to 3 minutes), until tender. When 1 minute of cooking time remains, add bok choy to the water with the noodles. Scoop out 1 cup of cooking water, then drain. Add noodles and bok choy immediately to the large bowl, tossing with the sauce until coated. Add cooking water a couple tablespoons at a time to loosen the sauce (you likely won’t need all of it).
  5. Divide saucy noodles and bok choy among 4 bowls. Top with the crispy pork, peanuts, and scallions.
